Thick Vegan soups are a practical food source during fasting-season. They are easy to make, contain many nutrients and vitamins and can be served as a delicious filling main course.

Creamy Broccoli Vegan soup

Ingredients
  • 3 cups broccoli frozen
  • 1 tbsp grapeseed oil
  • 1 cup potato flakes without dairy
  • 1 tbsp white miso
  • 1 tbsp Nutritional yeast
  • 1 tbsp onion chopped
Instructions
  1. Chop and saute onion

  2. Add 1/2 of the broccoli

  3. Add 1 cup of water and put in Vita-Mix. Blend smooth

  4. Transfer to a pot and rinse blending container with 3 cups of water

  5. Add potato flakes, white Miso and bring to a boil. Let simmer for 10 min.

  6. Add the rest of the broccoli and simmer for 12 minutes.

    Season with salt and pepper and nutritional yeast.

  7. Add 1 bay leaves and let rest for 4 to 5 hours.
