The Coronavirus Challenge is over!

My dear wify wanted to have fresh legume, and so she ordered food delivery. 😊

The challenge was easy for us, and as long we had water, we could have gone for months. We still have a lot of frozen food, which includes cooked dishes, baking goods, raw produce, flours, nuts, grains, butter, cream cheese, and portioned coffee (beans). We still have a wide range of our homemade freeze-dried vegetables, fruits, mozzarella, egg yolk, egg white, ice cream, and cheesecake. Besides, we have nuts, grains, flour, and dried beans, lentils, and cans of fishes, veggis, tomatoes, condensed and evaporated milk, coconut milk. Still, during this time, we learned a few things:

1. The content in the refrigerator diminished over time, and so we were running out of fresh milk, yogurt, cheese, eggs, and vegetables.

2. Tea and coffee, mineral water, and beer and wine depleted too. So what would we do differently?

Let’s start with dairy products: Definitely, freeze-dry some cheese and yogurt. Butter cannot be freeze-dried at least we don’t know how to do it, even it is advertised on Amazon as well as peanut butter. In our appliance, it would only make a mess.

Freeze-drying milk is nonsense, better have milk powder and evaporated milk in cans. I know it is not the same, but this is the better choice than ruining your freeze-dryer.

Even with the freeze-dried egg yolks and egg whites, I was not too happy. The egg while was losing some home their ability to form stiff egg white, and the egg yolks also act bizarre but can be used in baking when handled correctly. I will try to freeze whole eggs and see if this works better. Also, I would buy commercial egg white powder, which can be used to make meringues and work very well.

Cream, butter, and some cheese can be frozen.

We would have more teas at home. We portion freshly roasted coffee beans and freeze them. This strategy has worked out very well for us. Coffee beans lose their aroma quickly if you are keeping them in a jar and open and freeze them again. It is better to make small vacuum-packed portions that you freeze.

      Sorry for the late reply. As you can see not enough. If you want to keep it updated then you need to work every day on it. Developing the recipes, taking pictures, and calculating the calories takes time. Believe it or but I have hundreds of recipes but the photos are missing. Thank you for reading my blog.
