Potato Patties with Mushroom Sauce and Pan-Fried Red Beets

This is vegan food suitable for Saturday and Sundays during lent because it is cooked with some oil.

Ingredients
  • 5 medium potatoes
  • Salt and pepper to taste
  • 2 tbsp oil for frying
Instructions
  1. Wash potatoes, keep the skin on. Microwave for 6-7 min until cooked (more depending on your microwave oven settings). Let cool.
  2. Peel off the skins. Using potato ricer, process the potatoes. Add salt and pepper (taste when mixed well).
  3. Using hands, create 2-inch balls, flatten them a bit and form them into an elongated shape.
  4. Heat the skillet. Add 1 tbsp oil. Fry patties on medium heat for 2 min, reduce the temperature to low and continue cooking for 3 more min. Flip to the other side and fry until golden-brown, about 5 min.

A dairy-free vegan mushroom sauce with almond milk

Ingredients
  • 5 baby bella mushrooms
  • 2 tbsp of chopped onion
  • 1 clove garlic
  • 1 tbsp corn starch
  • ½ c almond milk
  • ½ tsp ground nutmeg
  • Salt and pepper
  • Oil for frying
Instructions
  1. Chopped parsley to serve
  2. Clean and slice mushrooms
  3. Sautee onion on medium heat for 3 min, constantly stirring. Add chopped garlic, mix. Add mushrooms. Cook for 3 min.
  4. In a glass, mix starch with 1 tbsp water, add almond mix and mix well. Add the liquid to the pan with vegetables and mix. Add spices. Cook for 5 more min on low, stirring from time to time. Sprinkle with parsley when serving.

Pan-Fried Red Beets

Ingredients
  • 1 Beet root
  • 1 tbsp balsamic vinegar
  • 1 pinch black pepper and salt
Instructions
  1. Wash and remove the skin of the beetroot then chop into thin strips. Add the beets to a non-stick pan, add 1/2 c water, cover and cook on medium for 5 min. 

  2. Reduce the heat to low and simmer for 10 more min. Check and stir a few times. Add salt and more liquid if necessary. Before serving, add 1 tbsp balsamic vinegar and season with black pepper and salt. Cover and let stand for 2 min.
