This minestrone doesn't use any oil for the fasting period "lent" or for anyone who has to reduce the oil and fat intake from processed oils. It is fast to make and filling.

Ingredients
  • 1/2 cup dried white beans
  • 2 tbsp dried soup mix from freezer drier
  • 1/2 tomatoes small can
  • 2 tsp miso red
  • 2 tsp nutritional yeast
  • 1 pinch salt
  • 1/2 cup peas, corn and carrots costo mix,frozen
  • 1/4 cup pasta shells
  • 1 pinch pepper
Instructions
  1. Pressure cook dried beans in 1 L of water for 30 min

  2. In the meanwhile make a soup mix from 1 tsp dried onions raw and 1/2 cup of freeze-dried vegetable made from frozen Costco vegetables (cauliflower, broccoli, carrots),

    mill to a fine powder

  3. add the vegetable powder miso, tomatoes to the cooked beans add more water if necessary simmer for 10 min

  4. Add frozen vegetables and pasta shell and cook 5 min/ Turn off heat and let sit for a few minutes. Add nutritional yeast and season with salt and pepper. You can add other dried spices such as basil if you like.
