Guacamole stuffed tomatoes can be served as a delicious appetizer or a refreshing side dish. This dish is quickly made in a few minutes.

Ingredients
  • 10 Campari tomatoes 3 wine ripe tomatoes
  • 1 ripe avocado 2 if small
  • 1/2 tsp garlic powder
  • 1 tbsp chopped scallions
  • 1 tbsp chopped cilantro
  • pinch tsp ground cumin
  • freshly squeezed lemon juice
  • 1-2 drops of hot sauce like Tabasco
  • 2 tbsp pine nuts
  • pinch salt
  • pinch black pepper
Instructions
  1. Cut off the tomato tops, scoop out the insides of the tomatoes. Reserve some flesh (no liquid) together with the tops. Mash the avocado with the spices. Chop the reserved tomato parts, combine with avocado mixture, add cilantro and scallions. Adjust the seasoning. Stuff the tomatoes with guacamole. Top each with pine nuts.
