Ingredients
  • 3 green bananas
  • 2 tbsp dry coconut milk powder or ½ can coconut light milk
  • salt and pepper
Instructions
  1. Peel bananas. Cut into 2-inch pieces. Cook in water for 20 min.

  2. Drain water from bananas, but reserve 2 cups. If using coconut milk, add it and ½ c water. If coconut powder, add it together with 1 ½ c water. Mash with the fork and add more water if needed. Add salt and pepper to taste and mix well.
Recipe Notes

Serve with seared sweat potatoes and guacamole or sliced avocados.
