Cashew Prune Chocolate Pudding

Again another oil-free vegan dessert for the fasting days. Raw cashews that are soaked for a few hours are an excellent base for sauces and puddings.

A cashew based dairy, oil, and sugar-free chocolate dessert.

Ingredients
  • 1 cup raw cashews 1 hours soak in water
  • 1 cup dried prunes if dry soak in water
  • 1/3 cup water or use water from prunes
  • 1/2 tsp vanilla paste
  • 1 tsp vanilla essence
Instructions
  1. Soak raw cashews for 2 hours at room temperature in water

  2. If your prunes are very rehydrated them for 30 min to 1 hour in water

  3. Drain cashews and add them plus the prunes to a high-speed blender. add 1/3 cup of either water or water from the prunes. add the rest of the ingredients and blend until you get smooth. Scrap a few times from the side. Adjust liquid if you want to get a silky consistency.  

Recipe Notes

If it is not sweet enough you then can add a sweetener of your choice.
