Ingredients
Bulgur Risotto
  • 1 cup Bulgur
  • 1 tbsp olive oil
  • 1 onion small
  • 1/2 cup Sake
  • 1 1/4 cup water
  • 1 tsp miso red
  • 1 tsp grounded porcini mushroom powder milled from dried porcini
  • 2 tsp nutritional yeast
  • 1/2 tsp garlic powder
  • 1 pinch salt
  • 1 pinch black pepper
Instructions
Bulgur Risotto
  1. Use a pot with a nonsticking surface. Saute onion in olive oil then add the bulgur to the hot oil. Stir for 1 minute and then the sake. Reduce the heat and cook the liquid down within 5 min. Check that nothing burns. 

  2. Add 1 1/4 cup of water and the miso and simmer for a few minutes add nutritional yeast, garlic, porcini, salt, and pepper. Stir frequently and cook until it is tender.
