Ingredients
  • 4 cup water
  • 1 cup barley
  • 1 carrot
  • 2 potatoes
  • 3 white mushrooms champignons
  • ½ stalk celery
  • 7-8 cornichons
  • 1 clove garlic
  • 1 tsp dried onion or 1 tbsp fresh chopped
  • 1 tbsp miso paste
  • ½ tsp basil
  • ½ tsp parsley
  • ½ tsp dill
  • ½ tsp basil
  • 2 dry bay leaves
  • 1 pinch Salt
  • 1 pinch Black pepper
Instructions
  1. Chopped greens (such as green onion) for serving

  2. Soak barley for at least 2 hours. Drain the soaking water

  3. In a large pot, add barley and water, bring to a boil, reduce the heat and cook for 40 min covered

  4. Finely chop carrot and celery, mince garlic. Add to barley together with onion and spices.

  5. Cut potatoes into ¼” cubes. Slice mushrooms add to the soup — Cook for 5 min on medium heat.

  6. Chop cornichons, add to the soup together with miso paste. Stir and add salt to taste. Add bay leaves.

  7. Reduce the heat to low, cover and cook for 20 more min. Turn off the heat and let stand for 5 min more before serving. 

Recipe Notes

Serve with fresh chopped herbs.
