Ingredients
  • 1 sweet potato cooked and cubed
  • 5 grape tomatoes cut in halves
  • 3 cup salad green mix
  • 2 tbsp dried cranberries
  • 1 pumpkin seeds raw
  • 3 tbsp walnuts
  • 1 tbsp parsley fine chopped
  • 1 tbsp balsamic vinegar
  • 1 tbsp avocado oil
  • 1/4 tsp garlic powder
  • 1 pinch salt season to taste
  • 1 pinch black pepper season to taste
Instructions
  1. In a bowl mix oil, salt, pepper, and garlic powder together

  2. Add the mixed greens and mix

  3. Add 1/2 of the potato and mix again

  4. Arrange the rest of sweet potato, tomatoes, cranberries, nuts and seeds on top of the salad. Sprinkle with chopped parsley.
