Salads belong to the cold kitchen and are served either as an appetizer, a separate side dish or, less frequently, as a main course or dessert.
The savory salad is defined as a cold dish consisting of raw or cooked vegetables, meat, shellfish, fish, cold cuts, eggs, pasta, cheese. The salad dressing is an essential component. It seasons the ingredient mixture with a sauce based on mayonnaise, oil or an oil and vinegar with herbs, salt, pepper and other spices.
Dessert salads are made from fresh fruits mixed with other ingredients such as seeds or nuts.
Note that during the religious fasting season such as lent no commercial oils are allowed which represent a challenge to create a tasty salad. In our recipe with of the fasting blog, we published some of our recipes.
