Ingredients
- 1 cup lentils red dried
- 1 sweet potato
Curry sauce
- 1 cup spinach fresch
- 1 stalk celery
- 1 tbsp ginger root small peeled chopped
- 2 tbsp curry powder
- 1 tsp ginger powder
- 1 tsp cumin powder
- 200 ml coconut milk
- 1 pinch salt
- 1 pinch black pepper
Instructions

Cook 1 cup of dry red lentils until it is medium soft

Cook one sweet potato until it is soft and remove skin and chop in smaller pieces
Make sauce in high speed blender

Add all ingredients of the curry sauce in a high-speed blender ( we are using a small size adapter for a Vitamix). Blend to get a smooth, thick sauce.
Mix together

Add the sauce over the lentils. Add a little water to wash out the sauce from the blender. Simmer for 10 min. Then add the sweet potato pieces and simmer for an additional 5 minutes. Season with salt and pepper to your taste.
