Ingredients
  • 2 tbsp coconut oil
  • 4 small sweet potatoes
  • 1 pinch salt and pepper
  • 1 cup water
Instructions
  1. Peel potatoes. Slice into rounds ½ inch thick. Arrange in 1 layer on a large non-stick pan, add 1 cup of water, cover and bring to a boil. Reduce the heat and cook for 15 min.

  2. When the water has evaporated from the sweet potatoes, check if cooked. If soft to touch, add 1 tbsp coconut oil and cook uncovered for 3 min. Flip to the other side and add the rest of the oil. Cook until browned on both sides. Sprinkle with salt.
