German Meatloaf (Fleischkaese)
Fleisch or Leberkaese is very popular in Germany and Austria. Essentially it is a meatloaf which is a large sausage without skin. One could use the same recipe and make sausages. Once they are fully cooked, they can be eaten either baked, grilled or cold.
Fleischkaese or Leberkaese is a favorite German and Austrian food found in pubs. It can be eaten hot, cold or warmed up or grilled like a sausage. It is a skinless sausage made as a meatloaf containing 100% animal products with no other fillers such as flours or other grains or vegetables added.
- 300 g Turkey ground
- 300 g Pork ground lean
- 400 g Pork belly remove 3/4 of the thick skin use meat grinder
- 18 g salt
- 1/4 tsp marjoram
- 1/4 tsp thyme
- 1/4 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp garlic
- 1 g black pepper
- 300 g shaved ice
- 1 tbsp coconut oil

Cut the pork belly into small pieces and if not done remove 3/4 of the thick skin. put them for 40 min in the freezer

In the meanwhile measure the other portions of ground meat and put as well in the freezer.
Prepare the spice mixture
Preheat oven 10 min before you remove the heat from the freezer.
Prepare a meat grinder and have a food processor with a cutting knife ready.
Use 1 tbsp of coconut oil to grease a meatloaf pan.

Process fast to ground the pork belly with the meat grinder and put half of the meat in the processor and store the other half in the freezer.
Do the same with the other ground meat by using half for the food processor while keeping the rest in the freezer.
Add 1/2 of the spice mix and 150g of the shaved ice.
Process fast with the cutting knife to get a thick homogeneous paste and put this paste in the greased meatloaf pan and press it evenly down.

Now repeat the process the other halves of meats you stored in the freezer, add the spices and 150g of shaved ice and process again to a thick homogenous paste and fill the meatloaf pan. Press down, so all the air bubbles are removed. Finally, use a wet knife to make the surface even. If you want to make a pattern on the top, then don't cut with a knife instead stamp the surface

Put in oven and and and bake for 1 hour (no convection)
Then another 25 min with convection
The turn on the broiler and watch that the surface gets nice crispy brown.
